My Mum makes the most wonderful vegetable soup, but uses a pressure cooker, of which I am far too afraid to contemplate! All that steam! And the noise hurts my ears.
I have been reading your lovely blogs as always, and many of you often seem to have some vegetable soup bubbling away, filling your homes with the scent of comfort.
So, what is your recipe for wonderful vegetable soup? If anyone is willing to share, I would be most grateful, and will be tying on my Cath Kidston apron to try out any recipes!

Here's my Mums & my recipe.
Minestrone Soup
1/2 cup thinly sliced celery
1/2 cup " " carrot
2 cloves garlic minced
3/4 cup cubed potato
1 16 oz. can diced tomatoes, undrained
1 cup thinly sliced zucchini or fresh spinach
1/2 lb.green beans..I use a can.
1/4 cup thinly sliced cabbage..opt.
3 cups hot water
2 tea. beef bouillon cubes
1 tea. dried basil leaves
1 Tablespoon dried parsley
Mix and simmer about 20-30 minutes, then add 1/2 cup broken spagetti pieces and or alphabet letters. If I have left over roast, I dice and throw that in at the beginning. I love this with Romano cheese sprinkled on the top of it. wish I had a bowl of it now in fact. Just passing by and saw your request. Hope you like this recipe if you try it!
